After pounding, poke steak all over with a fork. Place steak in the marinade in the large bowl, cover, and marinate in the refrigerator for 24 hours. When ready to cook, preheat an outdoor grill for medium-high heat, and lightly oil the grate. Remove steak from the marinade and shake off excess. 1. Combine all ingredients (except the steak) in a large bowl. Whisk to combine. 2. Place the meat in a gallon-sized freezer bag, in the bottom of a large baking dish, or in a non-reactive (plastic or glass) storage container with a lid. 3. Pour the authentic carne asada marinade on top of the meat. Then cover the dish or close the bag.
Cook's Note: To marinate beef, place meat in a gallon-sized freezer bag or in the bottom of a shallow baking dish. Pour marinade on top of beef, close bag or cover dish, and marinate at least 1 hour before grilling. Turn the steak once while marinating. Preheat the grill to medium-high heat. Place marinated steak onto the hot grill and cook 3-5 minutes per side, flipping once or until the steak has reached the desired doneness (145˚F for medium-rare and 160˚F for medium doneness).

Carne Asada Marinade. Marinade truly helps create a tender and tasty final product, basically transforming a standard cut of beef into something amazing. Our own Grilled Carne Asada Skirt Steak recipe offers one of the most flavorful marinades and takes just minutes to mix. In a bowl, mix the following ingredients until the salt dissolves.
Marinate the steak: Whisk to combine the olive oil, soy sauce, lime juice, vinegar, sugar, black pepper, and cumin in a large, non-reactive bowl or baking dish. Stir in the minced garlic, jalapeño, and cilantro. Place the steak in the marinade and turn over a couple of times to coat thoroughly.
Combine the orange juice, olive oil, cilantro, lime juice, lemon juice, white wine vinegar, cumin, salt, black pepper, jalapeno, and garlic in a large mixing bowl and whisk together until it is well blended. Reserve some of the marinade. Save ⅓ cup of the marinade in a covered container in the refrigerator.
In a bowl or large measuring cup, whisk together the vegetable oil, 1/2 bottle of beer, orange juice, lime juice, vinegar, and Worcestershire sauce. Whisk in the garlic, cumin, Sazon Goya, and salt and pepper to taste. Place the flank steak inside a resealable plastic bag and add the marinade mixture.
The Best Carne Asada Marinade. Because flank steak is a leaner, less expensive cut of steak, we need a dynamite marinade to transform this steak into a juicy, flavor bomb. Marinades need to accomplish three things: tenderize the meat, infuse it with flavor and chemically change the structure so it retains juices and actually becomes juicier. I.

In a blender purée the citrus juice, Serrano pepper, soaked guajillo chilies and 1/2 cup liquid from peppers, garlic, cumin, onion powder, salt and olive oil.
Directions. For the Carne Asada Marinade: In a 1-gallon zipper-lock bag, combine orange juice, cilantro, garlic, lime juice, olive oil, cumin, oregano, chipotle powder, and salt. Seal bag and lightly shake to thoroughly combine ingredients. Open bag, add steak, then reseal the bag, pressing out excess air.
Marinate the steak - put the steak in a large Ziplock bag (or shallow baking dish) and pour the marinade over to coat every. Let marinade for a minimum of two hours, preferably up to 24 hours. Step 3. Bring the carne asada meat to room temp by removing it from the refrigerator 30 minutes - 60 minutes before grilling.
Add the tomato, onion, garlic, sugar, ancho chili powder, black pepper and salt to the bowl of the machine, and pulse to combine. Add the cilantro, the fruit juices, mirin and beer. Process again until smooth. Step 3. Transfer the marinade to a large, nonreactive bowl and submerge the steak in it.
