Dutch Oven Italian Bread


Preheat oven to 460 F with rack in lower third of oven. Heat a covered 3 1/2 quart heavy ovenproof Dutch oven (9 inches in diameter) with the lid on for 30 minutes or until dough is ready. Place a sheet of parchment paper on your counter (about the length of a baking sheet). Sprinkle on a little flour. Once hot, carefully place the bread loaf inside the dutch oven ideally using parchment paper for easy transfer. Cover with the lid and bake for 30 minutes. Remove lid and bake another 5 minutes until golden brown on top. Remove the bread from the dutch oven and transfer to a cooling rack or it won't stay crispy.


Preparation. In a large bowl, whisk together the flour, sugar, salt, Italian seasoning and yeast. Add the 1/2 cup olive oil and the warm water and mix with a wooden spoon or spatula until all the flour has been mixed in and a loose dough forms. Cover the bowl with plastic wrap, and set it on the counter for at least 8-10 hours (or overnight). Instructions. Add 3 cups flour, yeast, sugar and salt to bowl. Mix with fork. Next pour in your warm water. Continue to mix with fork. Knead by adding 1/2 cup flour for about 2 minutes or until dough is slightly sticky. Cover bowl and let rise in warm space for 4 or more hours. The longer the better. When done rising, place on floured surface.

Place the dough seam-side down in a clean bowl that has been lightly coated with olive oil and dusted with flour. Cover and let rise for 1 hour.
